Beef Top Butt

Hi guys,
I bought a 14 lb boneless beef top butt. Do you think I should cut and half and smoke two pieces or can I do the whole thing? I am worried about the time factor, as in more than 24 hours. I am doing a pork butt in the smoker as well. Thanks in advance.

Another quick question. I am thinking about rubbing them today (afternoon) to go in the smoker tomorrow night. Will that be too long in the rub?

I wouldn't worry about cutting into two. It will cut time/fuel. The pieces will be heavy enough so that it won't affect end quality IMHO.

And no - I don't think it will be too long in the rub.

I'm assuming what you have is a top sirloin butt??? If so, what is your plan for cooking?? I would suggest NOT cooking to the point of pulling, but more for slicing around medium rare doneness.

Ditto.

It is a great cut for roast beef. It is not for cooking to the point of pulling.
