the local Meijer has beef spare ribs on sale today for $0.99 a lb i got 4 racks for just a little over $10 do i treat them as if they was my usual pork ribs? they have alot of fat on them do i leave it on or take it off? the bones seem alot thicker then pork not sure if that matters or not.

Click on "cooking" above and then go down to the section on "beef" under "other cuts" Chris has a good section on beef ribs and a particular recipe. I have cooked them before as they are one of my wife's favorites.

If their the kind that come prewrapped in heavy plastic, I've bought those same type of Meijer ribs last summer. They'll come out fine, but if I'm not mistaken there was a lot of shrinkage due to their high fat content.

Many here dont care for beef spares however Im not one of them. They do shrink, they do take longer to cook and they are somewhat greasy. However, for a change of pace and for the nice smoked beef flavor they cant be beat. You just have to give them more time on the smoker.
