Beef Short Ribs


 
I do like me some short ribs, for sure! Great bark-to-meat ratio on them. Looks like you definitely had some good eating.

That really looks damn good!!! Are those potatoes swimming in butter? It all looks very good... I'm gonna have to invest in a couple of cast iron pieces like that... A+ Jeff

The cooks look great. I love beef short ribs. Would you mind sharing how you cooked the potatoes. Thanks for sharing.

Sure thing! I got the recipe from watching other folks on this forum make them. Not sure who started it all (if anyone knows help me give credit where credit is due!). You just cut a potato in half and put it in butter and let it cook up like a baked potato (not much more to it than what you see!). I season the cut end with some McCormick Perfect Pinch Steak Seasoning (my base for most of my rubs) and set it in the pan on a slice of butter. I put another slice of butter on top and basted it every so often. This recipe works better for a high-temp cook with this cooking on the cooler side of the grill, but if you plan ahead you can do it during a smoke, just give yourself more time.

The cast iron here are just lodgewear, nothing too fancy and most camp stores have them. I have seen them at Target too. They are worth their weight in gold! I have had these a few weeks and already used them several times! I got these for about $12 each at Cabelas.
