Total cook time was approximately 6.5 hours at a temperature range between 230 to 250 degrees. I like beef ribs low and slow and wait until they probe like butter with a skewer. Not quite fall off the bone, but the meat pulls clean with a bit of effort.
All your missing is some tater salad and a adult beverage! Good meal there!
