Beef Ribs on the WSM

Same here.
Every time we go to a butcher, I look for meaty beef ribs because we rarely see them around here, (Baltimore metro area). We took a short road trip to Southern PA and, on the way back, stopped at a butcher shop in Westminster MD, (about 40 minutes from home).

They had short ribs in the meat case and I asked the butcher if I could get some that weren't cut into short. He came out with 4 bone slab, and I had him cut one of the ribs off, and bought the rack. It weighed ~ 4 lbs. They're also $1.00 cheaper than the short ribs.
