Beef Back Ribs

Well after seeing Gary H's Sunday Beef Back Ribs post I got me a craving and had to try them myself. I found these at the military commisary, it seems as though they have been split lengthwise. bought them nonetheless. here is the before pic, after pics will come later. They are cooking with my usualbeef rub. cooking them at about 275* w/ a bit of cherry and oak. Just thought I would share.

Here is the finished pic. Man these are good. They cooked between 275-300*. Came off in about 3.5 hrs. I thought I got the membrane off but I guess I was mistaken, or is there a second tougher membrane. That membrane was very tough but the meat was perfectly tender.

Whoa Graz - You cooked those Beef ribs and sent out no invitations? At least I didn't get one but I would have liked the opportunity to take you up on that invitation. Great job. Looks like you spiced them up just right too. Thanks for sharing. Bob

Well it was a first for beef backs and at the higher temp. I usually do spares and BB's at 225-250*. Gary's post and Harry Soo's Q&A pushed me to trying higher. I was shooting for 275* but the WSM settled in at about 290* give or take. So I went with it.

Me too, I will post in the morning on my St. Louis cook.
 
Those are some nice looking ribs, j graz. I love beef ribs (you may gather this from my avatar) but they are a decadent treat. The ones around here are quite rich.

Thanks for the link to the beef rub. It looks very flavourful, and I think I will go with that on my Smoke Day brisket.
