I've fried a few birds, I'm sure I'll do more.

My habit of brining the turkey for a day prior (half the normal sugar or less,) really helps to make sure that it's fully defrosted, and that's a major source of water, I do make sure that it's completely drained, and let it set for a bit before slowly lowering it into the oil.
