My secret for juicy pork chops.
500 ml water
5% salinity by weight
1/2 tsp baking soda into the brine.
Mix and marinate for 30-60 minutes.
Remove from brine and season as you wish.
Hard sear for 1 minute a side and then move to indirect till 125-130° per chop. Remove and rest tented for 5-10 minutes.
The juicest and most moist chop ever! And super tender too.
