BBQ Heritage/Farm Fresh Chickens

Does anyone have experience with smoking these types of chickens?? I have a couple that I'd like to slaughter and was wondering how they do on the smoker. These are not the Cornish X that you buy in the store and generally have more dark meat in them.

Ive not tried any fresh chickens like the ones you would have, but I would definatly give it a shot! I'd love to have me a fresh killed free range chicken on the smoker...I've heard that these particular chickens have better flavor and more dark meat like you stated but I LOVE dark meat!

I don't care much for smoking chicken - I like much higher cooktemps - but one need not do anything different in terms of cooking with heritage breeds.

Last year, we picked up some "yard bird" at a local Farmer's Market.

My opservations:
-Somewhat more heavy-boned than commercial chickens
-Bigger legs / thighs
-A bit less "flabby", but still plenty of fat to cook nicely

They guy that we bought them from did a really nice job of cleaning them (needed less picking-over than required for some super-market fare).

As Kevin stated - cooking-wise, they required nothin special.
