well a good thermometer is always nice to have. Like a maverik ET-732 or a thermapen(or both)

A good set of tongs.

And ofc a good camera

An instant read digital thermometer
A remote meat probe
A good grate scraper
Cast iron skillets
100# of NY Strips
 
- At least one good digital probe thermometer that can monitor the temp during the cook.

- stock up on spices at Sam's or BJ's or Costco.......much better than buying the little jars at the supermarket

- a good BBQ brush/baster......I use the large Kitchen Aid utensils and they are sweet

that's it for me, everything else I have is pretty vanilla......WSM 22 and lots of disposable aluminum pans for rubbing/storing/transferring meat
 
Others here can speak to this better than I can but here's a start:

Charcoal Grills:
- Weber chimney starter
- Rotisserie (not cheap, looking to get one someday)
- Weber slide-aside lid holder (only if you have a OTS/G w/out a lid holder)

Either Charcoal or Gas Grill:
- Thermapen (not cheap, wonderful for all cooking/grilling/BBQ)
- Good tongs
- Cedar planks
- Rib rack
 
A remote thermometer for the pit and food. Don't only cook by temp, but knowing the temps can help give guidence when starting out.
 
Tongs.
Instant read thermo.
Dedicated pot holders or bbq/welding gloves.
Charcoal chimney.
And most important,BEER!

I'm a die hard lover of Sam Adams Octoberfest. Just picked up 4 cases of it so I'll have some to drink all year long!
 
A good cleaver & cutting board for chopping up the bark from my Pulled Pork.
A great site such as this one to learn and experiment with different recipes.
 
Gloves. I thick pair for dealing with hot items like the charcoal bowl and a waterproof pair for handling meat.
 
3 or 4 sheet pans (I use mine every day for 100 purposes other than grilling or barbecuing.)

A restaurant-size roll of heavy-duty aluminum foil

A vacuum-sealer is a nice extra.
 
Disposable food gloves. I paid a few bucks for a 50 pack.
Along the same lines, a crappy pair of gardening gloves to use when placing briqs or lump in your cooker. Charcoal dust is like rib sauce, it takes days to get it all off.
