BBQ Addiction on Food Network

Anyone been watching BBQ Addiction on Food Network with Bobby Flay? He grills and smokes just about everything you can think of. He was using a WSM today to cold smoke tomatoes by putting ice in the water pan to keep the temps low. Has anyone used this technique for cold smoking anything like cheese, etc?
 
I actually saw the episode. I can't comment on smoking tomatoes, google it, i'm sure you can smoke anything. If you observed him using the wsm he added with wood chips he did not know how to close the access door. I was laughing like crazy. I think he has all of those products(grills) as marketing and product placement. Another interesting point, it seemed like they cleaned or swapped out grates, the grates always looked clean.
 
Mondays at 10:30am and again on Sundays at 11:00am EST. I record it so I actually had to go look it up.
 
Ya know,it's very similar to all his other grilling shows. This was the first one I actually watched start to finish. Still not impressed.
 
I'm going to have to record a few shows to check it out. I've been getting into the 'Primal Grill' re-runs which are being aired. I don't agree with everything that Raichlen does, but still worth watching.
 
Not a huge fan, but I believe I read that they have something like 22 smokers most WSM's, and that they keep 4 on hand just to keep hot coals at the ready.
 
As to the smoking tomatoes, I recall seeing, I think it was a Tylers Ultimate on FOOD where he was in Italy, and a lady was smoking tomatoes to keep them longer. I guess it would be like smokey sun dried tomatoes? Just dried in a smoker instead of the sun.
 
From the same episode, what about that (non Weber) charcoal grill with the rotisserie that he did the lamb on? I liked that one. Anyone know the brand name?
 
to touch on Primal Grill, Im a big Steven R fan but I saw him take a pork loin to 195 and I told the wife, "whoa is that going to be dry". she snapped back that he has a show and I dont. Watching him slice a 195 degree pork loin was priceless for the sahara dry look of the meat
 
I've been DVR'ing Flay's show and I do like it, after watching one whole episode. I saw the one where he did a brisket, roti chicken and a few other things.

Tony: I think I know the cooker you're talking about. The one episode I've watched so far had him doing roti chickens on what he refered to as an Argentinian style grill. No lid, just what resembled a large table with a grate and a "back wall". I still have the episode on my DVR, so I'll try to take a look and see if he mentions more details.

I just saw part of that episode today and I don't recall if he mentioned the name but it was a cool grill.

Also, if you have Verizon cable, you can see the show for free with on demand

I've been enjoying them a lot. I've tried a couple recipes like the Gaucho beef ribs (on my kettle) and his coffee rub for brisket. I have been pretty happy with the results. I will agree that I don't do everything the same way he does, but those are minor differences.
 
I did a search and couldn't find the "Primal Grill."

Is that the exact name? If it is, which network is it on?

yes, that is the spelling. On the Chicago market they are on WTTW which is a PBS station. I get it on Comcast Cable.

He also had a series called BBQ University. One of our WTTW channels ran a marathon of that last weekend. Primal Grill is out on DVD. I'm not sure I would buy them but I have them on my Netflix list. All of their recipes are on the Primal Grill web site.
 
When people start talking about Flay, I just think back to the episode (forget the show title) where he was using the WSM and put it together wrong. He placed the water bowl directly on top of the coals and then put the center section on.

I laughed for a long time on that one.

I have used ice cubes in my water pan when smoking cheese.
