BB Turkey roast for lunch meat (photos)

I have 2 Butterball boneless turkey roasts. Injected, white and dark meat. Not really sure what they are besides that they are turkey

I smoke them, then refridge and slice, package and freeze. I normally use McCormic Turkey Rub, but I'm looking for something different this time. I'd like to do each one differently. Any ideas?

Hi Brandon-

This is a basic and simple one, I like Cajun seasoned turkey. You might try Tony Chachere's, Zatarain's, Slap Ya Mama, or a similar seasoning sold in the shaker cans on the spice isle. I rub it under the skin so the flavor actually gets into the meat.

If by "injected" you mean that the turkey is pre-treated with a brine solution, I wouldn't go too crazy with the cajun seasoning. The commercial ones are usually high in salt, and you don't want to add tons of it to already salty meat. Some of the larger brands make low-sodium versions, which may be perfect for this.

Well, I kind of just wung it, if you know what I mean. The first turkey roast I just did with good ol'McCormick Turkey Rub, the other I dusted lightly with Tony C's Cajun, then I doused liberarly with some allepo pepper and then added some savory.

I'm curious, when you say that you slice it for sandwich meat, do you really slice it like deli-style thin? If so, how do you do that? I love slicing turkey breast thin for sandwiches, but turkey cold-cuts from the deli or grocery are a completely different animal, so to speak.

I slice them up like this, makes good lunch meat. Better then anything you can buy and cheaper too. This is how I convinced my wife to let me buy a meat slicer

I have done pork loin and sliced it also. No ham yet, but you could. I bag it all up and freeze it then, use it as needed. The rest of the pictures are here Enjoy!
