BB Rib question...

I'm gonna do 4 racks (full) of bb ribs. My question(s) is;

How long of a cook at 250?

When do i (or should I0 foil?

Use the mm?

Baste (with apple juice) during the smoke or not?

I find it takes me about 4 hours usually to cook baby backs using the BRITU method, 3 hours at 225 then finish them at 275. I suggest you check out the BRITU recipe and cooking method as a starting point then modify as you see fit.

You can fire up as suggested in the recipe or use the minion method, whatever works for you. As for foiling, it's a matter of personal preference, same with basting. You may want to experiment a little and try different things on the different slabs since you are doing 4 of them.
 
I do bbacks at 250 grate (about 265-270 lid).

Usually I plan on 4 hours total.

Cook 3 hours normal, foil when the color is right and the ribs are getting tender for maybe 30 minutes, let firm up final 30 minutes (apply glaze in the last 10 minutes).

I use mm for everything, I add a bit of apple juice to the foil when I wrap them . I pull them when they are toothpick tender.

Otherwise, no sauce, no baste. I ,
