Barefoot Contesa/Chicken/BBQ sauce ????

Saw the Barefoot Contesa grilling chicken today at the beach.

She made her own BBQ sauce, not sure if she put any sugar in it, but she did put honey, and several other things in it.

She marinated the chicken pieces in the BBQ sauce I believe she said for a few hours, said you could overnight it I believe.

then she grllled it over charcoal, someone asked if she par cooked it and she said no.

It will be fine if the chicken is far enough from the charcoal, looked like it might have been severl inches above the charcoal, it was a little hard to estimate the distance.

Has anyone cooked chicken pieces by marinating in BBQ sauce first then just cook it right over the coals like on the lower grate with no water pan ??

Her chicken looked fine I would have expected the out side to be burned, but it looked pretty good. Maybe TV tricks ???

Any info appreciated.

John, I've done a overnight marinade in bbq sauce and then next day wiped all excess off and grilled on lower rack (no water pan) of the WSM with really great results.

Just kidding! She probably spent a LOT of time flipping the pieces to keep it from charring.

There would still be some on the surface and if it's sweet, it would soon burn.
You can't argue with the Barefoot C, after all, everything she cooks, like Martha S, comes out "perfect". Never a flop. (didn't mean to jump in between you and Marc)
 
Ina's one of my favorite FN personalities. There's just something about her easy manner and everything she makes looks great! I also like the fact that she often uses a grill (Weber in fact). Combine her with Megan Fox and you've got my dream gal.

I'm sure I have the chicken episode on DVR, I'll have to check it out.
 
"Excess" is a very relative thing. In addition, just how hot of a fire do we have? Over fully engaged lump... it's a very interactive experience...
 
I have chicken (bone in skin on) thighs, marinating in BBQ sauce as we speak, to cook for lunch today.

I'm going to use about 1/2 chimney of briquettes, and cook on the lower grate about 5-10 min per side watching it closly for burning.

Then move to the top rack if necessary to finish.
