Bakers string instead of Rib rack?

I don't have a rib rack, but going to a friends to cook on the 4th and won't have enough room on the grate (using his Weber performer). Can I use baker's string and curl the ribs up and tie them off? any disadvantage to this? I have 3 racks of BB's and if i do this, I will have enough room.

I am going to try to slow cook them at 250-300 by controlling the amt of coals and bottom vents. I have successful utilized the domino method but with so many ribs, won't have room to put too many.
 
Many people curl their ribs and hold them with a skewer. I can't see why string wouldn't work just as well, since your temperature won't be high enough to burn it.
