Bacon Wrapped Sausage

A local BBQ place has been serving bacon wrapped meatballs for a while now. We decided to do our own twist on it ... bacon wrapped sausage balls.

The sausage is a Spicy Italian from a local butcher shop. The bacon is also from the same shop. We smoked the balls for a couple of hours between 250 and 300 degrees with a bit of cherry wood.

Even my wife, who was a bit skeptical, loved them.

Imagine, sitting in front of your 96" screen watching Chris Evert (in her prime) swattin' T-balls while poppin' Derek's BaconBonbons in your mouth....

Patrick, no dipping sauce required! But, if I was to guess, something with a maple base would offset the saltiness of the bacon and sausage.
