Tried Myron Mixon's bacon wrapped chicken last night. Served it with Grilled Potato and onion packets and a Romaine salad. This is a simple but great meal!
Started out by sprinkling on some dry rub and wrapping four boneless chicken breasts with two pieces of bacon and secured them with a toothpick. Bacon makes everything better, and BSCB's are no exception. Let them sit on the counter while my younger daughter & I prepped the potatoes & onions and I got the grill started.
Lit half a chimney of GFS briquettes and poured them on top of 15 or so unlit with a couple of cherry wood chunks thrown in for some flavor. Grilled the chicken indirect for 30 minutes, then added the potato packets over direct heat to get them going.
After 15 more minutes, chicken temps were around 155-160°, so I sauced them with a little modified No.5 sauce and let them rest for a few minutes. Here they are just before saucing.
Here's your plate. Sliced them up with some bacon goodness on top, and a drizzle of sauce.
Sprinkled a little Penzey's Forward on the potatoes for a little extra flavor.
