Bacon Wrap Lollipops 1st for me

Thanks to John for posting his chicken lollipop cook.
I saw this method before, put it on my mental to-do list, but my old brain had deleted the file.

Video of my first ever lollipop making attempt (Warning: it's kind of long and pretty boring, and un-edited, skip it if you would like) is here.
My studio.
I could stare at this sight all day!
After the outside trial, I moved inside, and the other 5 I made went faster.
I used only the drumette part, put my own rub on all.
Used K-Comp, and a fairly large chunk of maple wood.
Cooked at 250 for an hour, then brushed with sauce, then on for about 15 min. more.

I really liked them, my wife not as much as the regular wings.
The bacon was very well cooked, but she is an extra, extra crispy type person.

Wow, I make sesame chicken lollipops all the time and never thought to wrap them in bacon! They look awesome!

You don't "lollipop" the wingettes? I know its hard to do but it's worth it.

Never thought about bacon wrap but I like things wrapped with bacon.

I was thinking about trying lollipops this weekend. How does the skin turn out, being on the inside away from direct heat?
 
The cook looks great. I could eat every one of those. Wings are the best.

Scott, I have never done the lollipop thing. Is there a special trick to it for the wingette portion? Do you have a special method for the drummie?

With drummies you need to cut around the joint and with a knife scrape all the meat down to the other end. The wingettes are a little harder because you need to seperate the little bone from the big one and remove it by twisting and pulling, sometimes using the knife to cut the sinew, then pull allthe meat down to one end. it takes some practice to get nice ones like bobs but it can be done. I marinate mine in sesame oil, soy sauce, teryaki sauce, a little sugar, garlic powder and tasted seseme seeds. Oh yeah, I got 6th place for these at the snowshoe in abington.
