Started off smoking about 6 years ago on a 18.5 wsm my wife bought me for my birthday. Loved that thing. A few years ago I bought an fec-100 and I have been using that ever since, because at one point I had inklings to compete and I enjoy cooking for a large group of people.. Well yesterday I bought myself a new 22.5 wsm. Why? Because even when I was newer, my wsm always made better BBQ than my fec. I never could get a half decent brisket in that thing.
Anyways, I cooked on the new wsm today despite it being -17c and snowing. Cooked 6 chicken halves with pecan, 325-335 for about 1 1/4 hours. The chicken came out beautiful. Got bite-through skin, ALMOST at crispy, not quite. Still waaaay better than on my fec. I am glad to be back!!
