And that means meal prep. Marinated about 4.3lbs of boneless skinless thighs in Newman's Own lemon basil dressing. Big bag of sweet peppers kissed with olive oil, salt and Italian seasoning. Threw the peppers on the grill briefly, just to add some color; then chilled to stop the cooking. Meanwhile, a double batch of rice pilaf on the stove, and the chicken went on. This should provide the boys lunches for the next three days and we've got some leftovers for snacks. Hard to believe summer is coming to a close already.
