Last weekend, my wife heard that pork belly was on sale at Costco. She decided to pick some up and have me make some bacon since it’s so expensive. She got a nice 11 lbs. belly. So, I started curing it.

It doesn’t fit in my 18” WSM to smoke with applewood. So, we’re running the 18” and the 14” WSMs. There’s not much wind today and since I’m using the snake, things aren’t going to take off on me too badly.

I usually pack 8 - 10 slices per vacuum sealed bag.
The wife and I empty nesters for the most part and 8 slices is way more than we can eat so we will have a couple slices each for breakfast and maybe a BLT for the second meal.
 
Dan, that's beautiful. What was your finished weight??
Ended up at 9 lbs. finished weight. We packed most of it into 1 lb. packages. We had 2 half-pound packages and a bit of bits as a separate package (unweighed). Cooked another half pound and had BLTs for dinner. It was so good. Just need to sharpen my meat slicer.
 
My slicer has been giving me grief also.
It’s an old inexpensive one.
These last few years I’ve been having to rotate the bacon every few cut passes or I get a thin section hanging off.
I inspected the blade and it had a slight curved cutting edge, so I ordered a new blade and it still doesn’t cut straight (if that’s the right way to describe it).
