Went into an Oriental market, yesterday, to pick up some Skirts and saw in
the meat case what I first took for Baby Backs for $2.99/lb. Upon closer
inspection, I saw it was "Baby Spares", about 6 - 10" longer than Baby
Backs and a little wider. They looked real nice, but I've never seen these
before. Looked like they had been St. Louis trimmed.

Does anyone have an idea on what these might be? Maybe I should go
back and see what these are all about.

Any ideas?
 
Could they have just been the 3 1/2 and down spares that we used to be able to buy before "Bronto" spares became the norm? The baby spares labeling might just be a language difference thing.

I intend to go back and check into this. I have never seen

Further on the "Baby Spares" --

They were, in fact, Baby Backs that had been mislabeled --
language thing. Nice looking racks. Very meaty. Price was
$2.99/lb. I bought two racks for this coming weekend.
 
The wider bones are only from spare ribs not the loin. Some butchers will cut the spares in about half and sell baby back look alikes. They are typically sold in Chinese restaurants. The true way to tell is to look at the width and curve of the bones. Baby backs have more curve to them than spares. Compare them with other ribs in the meat counter and you will see the differance. $2.99 is a lot to pay for cut down spares. Sorry to be the heart breaker. Don't buy them!

I had the butcher pull them out of the meat case and took a good
look at them. They were Baby (Loin) Backs, alright. They did look
real good, so I bought a couple.

I also told him to change the hand-written sign, to say "Baby Backs"
instead of "Baby Spares". So, I believe I'm set.

Thanks for the info and welcome aboard -- Jim's had to carry the load

I just bought some at costco for $2.99/lb in the cryovac containers...not a bad price..but damn, why are these things so expensive relative to other pork, they are all bone! they should be like $0.50/lb!

On another note, a month or so ago, i was in Scotsdale, AZ and i was reading the paper, and saverite had danish baby back ribs for $0.99/lb! DAMN! iwould have filled my freezer!
