Baby backs


 
Tried doing baby backs today on the WSM. They came out great I used apple wood and penzys BBQ 3000. I used my maverick and kept the temps at 275 for the first 3hours then foiled and sprayed with apple juice and sprinkled brown sugar on top. 1 hour later checked they were super tender placed back on the smoker and sauced with sweet baby rays for 30 min. I will be doing them again real soon. I have pics just have to figure out how to post them.
 
Sounds like the Harry Soo method. Works great. I do the same with backs. Try drizzling honey or agave nectar on the ribs after adding the brown sugar before foiling. I helps to give them a nice sheen even before saucing.
Also. I cut my sauce with some pineapple juice, hot sauce and cayenne (depending on your spice tolerance). It thins the sauce and eases the sweetness.

James, I started a topic asking about using a Costco bought sauce;

("Robert Rothschild Farm" Roasted Pineapple and Habanero Sauce that lists; Sugar, Pineapples, Pineapple juice, Citric acid, Ascorbib acid, Lemon juice, Cider Vinegar, Onions, Yellow and Red Bell Peppers, Habenero Peppers, Mangos, Xanthan Gum, Natural flavors.)

Does this sound similar to what you used?
