The other night I was reading receipts from Chris Lilly, and I was reading how smokes his ribs. My??? Is this, why does he tent his BB, and not his St. Louis ribs?

Can't speak for Chris Lilly, but this is my take. Back ribs are easier to dry out because spares have more fat. I've cooked some st. louis ribs without foil that might've not been quite as tender as my foiled ones, but the bark was better. Can't say that my unfoiled back ribs have ever been quite as good as my foiled ones, though.
