Baby Backs for my Friends

I wanted to do some cooking for a group of my friends over the holidays, but at Christmas, everbody is going their own direction so I decided to do some cooking over the New Year's Weekend - kind of a way to welcome in the new year. I cooked a Boston Butt on my Kamado Joe ceramic cooker turned out great) and did 4 slabs of baby back's on my WSM.

Pics don't do them justice - they turned out really well smoked 2-1 1/2 - 1 over pecan and hickory.

Dang Pat, I thought the BB's I smoked the other night were very meaty, but yours look even more so!

Nice color on them too!
 
Bob and John - thank you! I had to trim some excess fat from a couple of the slabs - but there also was more meat - small price to pay!

Bob, the color comes, I think, from cutting down a bbq sauce with vinegar and glazing them a few times the last 20 minutes or so they are on the grill. They may have gotten a little more brown this time because when I put them back on to firm up after foiling, I put them on direct but from about a foot above the coals (325 or so). I used Big Bob Gibson's sauce as the base for the glaze - I just couldn't bring myself to use my bottle of Blues Hog - and added some honey along with the vinegar.

It was a nice way to start the new year - even if it was a bit chilly!
