I will be catering a 4th party (20 people) and was told today they want both baby backs and SL spares. I am also doing pulled pork, beans and ABT's, not really a problem. Question is I want the ribs to come off at the same time. My thought is to put the BB on 1 hour after the SL, or should it be less. they requested "fall off the bone", they are paying for it so I will give them what they want, any thoughts on the timing? I have never done BB and SL together.
