Baby back ribs --- first time "dry"

Smoked 4 racks baby back ribs this weekend with apple and hickory wood... Rubbed with combo 2 parts penzeys Arizona Dreaming and 1 part local grocery store bbq mesquite rub .... Sauced two racks at end with combo of SBR/aple cider vin/rub/chipotle Tabasco... Left the other racks dry (lil xtra rub thrown on after taken out of foil)

Can't say enough about how GAD (my own vernacular means way way better than good)... The "plain" dry rub only ribs were... Let the meat flavor shine thru..
. The wet ribs were also GAD but I ve smoked em that way (sweet spicy sauce) before ....

I'm still new to this... If yinz haven't tried the dry ones yet.... Put it on ur short list...
 
Glad you liked them. I think when the weather moderates, I'm going to look for a new rub. The last couple of cooks, I have not been happy with mine.
 
Kurt, if you want some really good dry ribs, you ought to smoke some st. Louis ribs. I go to the trouble of foiling and glazing back ribs, and my wife doesn't want me to change a thing. However, with st. Louis ribs, most of my slabs just get rub and smoke. Once tender, they get dredged in a warm 50/50 vinegar/water bath and then get hit with more Memphis style dry rub. Same rub goes in a shaker for the table. Not as pretty as glazed ribs, but man, they're good.
 
V_Rocco, try some Kosher salt, fresh cracked pepper, granulated garlic and cumin. Most people over rub there ribs, the ribs are the star of the show not the rub, let the meat shine.
