Automatic Temperature Control

For the past two years, I have read post after post about how the WSM is built to maintain its temperature for a long time. Well, it is 40 degrees outside and windy in NJ. Hosting a b-day party for my daughter - and rather than have the usual deli or Italian food - I decided to give my guests a treat and have BBQ in the dead of winter.

Even though the winds are gusting to 20-30 mph, and even though my WSM is sitting smack in the middle of my patio - with nothing to shield it - it has maintained its temperature to within about 5 degrees for the past 4 hours. Had to use a little extra fuel (Kingsford briquets) because of the cold - and had to open the vents a little earlier than usual - but the darn thing has been holding steady at 245-250 since 10am.

Talk about automatic temperature control!

(Two racks of baby backs and one rack of spare ribs - in case someone asks).

gotta love the WSM. i don't miss my old offset one bit. and now that i have a pitminder, i can go to bed and REALLY not worry about my food. i didn't really have to before the minder, but i always woke up every hour or two to look at my maverick monitor. now i don't even do that.

Todd,
I couldn't agree more. I'm having a hard time justifying buying a temp control system because the WSM is so steady in temp. I use the Maverick to save the time to walk outside...but it really is darn near "set it and forget it" at least for 8 hours or so
