For the past two years, I have read post after post about how the WSM is built to maintain its temperature for a long time. Well, it is 40 degrees outside and windy in NJ. Hosting a b-day party for my daughter - and rather than have the usual deli or Italian food - I decided to give my guests a treat and have BBQ in the dead of winter.
Even though the winds are gusting to 20-30 mph, and even though my WSM is sitting smack in the middle of my patio - with nothing to shield it - it has maintained its temperature to within about 5 degrees for the past 4 hours. Had to use a little extra fuel (Kingsford briquets) because of the cold - and had to open the vents a little earlier than usual - but the darn thing has been holding steady at 245-250 since 10am.
Talk about automatic temperature control!
