So this weekend will be the christening of my new 22. My Maverick thermo should be here by Thursday and Im going to start with some Kingsford charcoal and wood chips, not sure which kind as Im still trying to decide on the meat. For meat I was thinking a brisket or butt, any thoughts for the first time, and am I missing any equipment to get me started?

Butts are pretty forgiving. If it's your first time ever smoking, I recommend a butt. Get chunks not chips if you can. Good luck!
 
Are you able to find wood chunks vs. "chips"?

I'd go with a butt for your first cook as they are much more forgiving than brisket. Check under cooking topics on the main page.

Gerry, go for the butt, oh, and beer. Every 1st, 2nd,3rd, 4th &5th cook on a new WSM needs beer. Just for lubrication, mind you. Oh, and a lime! If it's Corona, and why wouldn't it be?

+ 1 on the wood chunks instead of chips.also i find my chimney charcoal starter to be invaluable,if you don't have one i recommend getting the Weber brand-about $16 at most places that sell grilling supplies.Cannot go wrong with a pork butt...Let us know how your cook turns out!enjoy-Richard
 
So my butt has been in the fridge after being rubbed since Thursday, its a 6lb'er and Im thinking if I plan as much as I can, to eat around 4pm Sunday It should hit the heat sometime in the middle of the night Saturday

I know time is not the marker but temp is, but I have to try and gauge some kind of timeline for this?
