Our nephew visiting this weekend and requested pulled pork. Friends chimed in with endorsement. So last night, my son and I salted and rubbed two 9 pound Boston butts. Here's one of them at 4 AM next morning.
Prepped a mop sauce with Raichlen's recipe, including cider vinegar, ketchup, brown sugar, jalapenos, onion, etc. Some say it doesn't make a difference--I think it does.
Mopping the pork about every hour. This was at 5:15 AM.
Looking good. The bark was awesome, and I swear the mop helped.
We're about 12 hours in and it's still not there. WSM 22 has held close to 250 all day. I finally got impatient and opened the vents, so temp started climbing toward 300. I finally pulled it off the WSM after almost 14 hours and it probed like butter. Internal temp measured 195.

It was so good! Sides included macaroni salad, Carolina cole slaw, and baked beans. Have a great weekend!
