Artisanal rumaki

I thought it would be fun to try rumaki. Jim Lampe did some great bacon-wrapped water chestnuts a little while ago -- my inspiration.
Ok, why "artisanal" rumaki. Rumaki is one of those faux-Polynesian bar foods made popular by Don the Beachcomber and Trader Vic's; an Asian-inspired American creation using canned water chestnuts. I wanted to use fresh water chestnuts and my home-made bacon.
Here we go...
Fresh water chestnuts. go for the ones that are firm and shiny. No exceptions. Cut off the top and bottom, peel with a paring knife and cut in half.

One strip of bacon down, one half water chestnut, one piece of marinated chicken liver.

Skewer and grill indirectly until firm. Grill directly for a couple minutes, then finish indirectly. Watch for flare ups!

i don't think I've ever seen fresh water chestnuts? come to think of it, I've never seen a salt water one either..... *rim-shot goes here*

About a month ago, I picked up a used copy of Trader Vic's original cookbook ($4 + $4 shipping) hoping to get some ideas for bringing back the pu pu platter into my life. Unfortunately, the book's pretty thin on food recipes (lots of drinks!), and what's there isn't much to contemplate. I'm going to try to remember your recipe though.
