I have a small salmon filet that I'd like to smoke and all I have is a bit of apple wood. Do you think it will work. The chunk is the size of about half a baseball.

Thanks

Sure it will work. Wood isn't required, just preferred for that smokey taste. You'll get some smoke flavor from the wood and the charcoal

I have used apple many times to smoke salmon. It will work great. Consider brining the salmon even for a short time. Brined, rinsed and allowed to air dry for 30 minutes or so the fish will develop a shiny glaze (pellica) it picks up the smoke flavor much better. The brining is not necessary, however, to introduce the smoke flavor.

I use apple all the time with salmon and absolutely love it. My wife says it's the best salmon she's ever had. I use a medium direct fire on the kettle.

Yes, YEs, YES! Apple wood works great with salmon in my experience. I also agree with Eric, brine it first, does not take long. Let us know how you liked it.

Yes applewood is great for salmon. Just did some Coho two weeks ago. BUT - that wasn't on the WSM it was on the Performer (grilled). I used apple chips and the salmon tasted great.

The salmon taste was great not to smokey but I left it on the heat for too long. My temp was around 210 to 220. It was my first time smoking fish so live and learn. I will say that over cooked or not it did not go to waste. Ate it with crackers while watching the Patriots game.

Thanks
Chris

Sorry for the double post. I thought I was editing my previous one.
