Apple Brine ? - First Turkey Smoke

Planning on brining and smoking my first turkey for my first time to host Thanksgiving. I was planning on doing the apple brine and bought the ingredients but 1lb of sugar to an apple juice base sounds like it will be way to sweet for my family. My family traditionally injects the turkey with cajun seasoning and fry, but i going with the curve ball. Any suggestions or general comments to help me better understand the flavor profile this turkey will have after the apple brine?
 
It doesn't come out tasting like candy, if that's what you're worried about. People have raved about this recipe for years, I hate to recommend that you deviate from it. But you won't know until you try it...yet another reason to cook a practice turkey using a particular recipe in preparation for the Big Day! :wsm:
 
Thanks Chris. another question, i have a store brand kosher salt, should i err on the side of 3/4 cup or the full cup?
 
Jeff I got 2 in the brine now...I have done the apple brine for a couple years now and it's tasty!! Flavor is right on and the color is amazing..althought the JD brine is tasty to but I'd rather drink the booze!

I think you will amaze them with the smokey flavor...good stuff!
 
Not all kosher salts measure the same by volume. If you happen to have a kitchen scale, weigh 5 ounces of your store brand kosher salt and you're good to go--that's equivalent to the 1 cup of Diamond Crystal kosher called for in the recipe. If you don't have a scale, just go for the full cup measure and press on.
