i got a 3 pack of baby backs from BJ's for 2.99/lb to do yesterday. on a whim saturday night i pulled the membranes off and rubbed both sides of each with wooster sauce and saran wrapped them over night. then a few hours before they went on i rubbed both sides with the wooster sauce again and sprinkled both sides with JH Pecan rub.

i rolled them, set my pitminder for 225 and smoked them for 4 .5 hours. then i unrolled and sauced 1 rack with sweet baby rays and one with sonny's smoking BBQ sauce. the other i left unsauced. the unsauced one was by far the biggest hit. they went quick.they were probably the best ribs i ever made. i think i will do the worcestershire sauce rub on my next butts to see if it turns out as good.

I use wootsy sauce on Butts and Brisket before applying the rub. I don't rub the night before, I do it right before the meat goes on the WSM. Never tried the woosty on ribs. Next time I'll give it a go, I love woosty sauce.
