Cooked indirect with a dome temp of around 325-350* dome temp with some Susie Q's Santa Maria style seasoning and a hunk of red oak for smoke.Cooked the tri tip till around 115* and let her rest a little and ramped up the Weber to about 425* dome temp.
Cooked direct until internal temp was at 135*
Plated with some cheesy garlic bread and some grilled carrots and peppers.
