Hee hee. More for the rest of us, then. Just crossed fourteen hours, and the brains are sitting in the high 170s and smelling like heaven. I wish I could do this every week.
 
Anyone else wrap there butts like this? I've been just sorta tying them a belt so they don't fall apart. Is this tight wrap work good to hold it all together or is it like pushing down your burgers where your just unnecessary squeezing out moisture?

I'm looking forward to seeing what they look like.
 
These guys were boneless shoulders from Costco. Excellent value, but they're handled pretty roughly. If I didn't tie them back together, there's no way I could get them to cook evenly. I don't think there's any issue with drying them out.
 
I find that tying them actually makes them cook more even and IMO they are more juicy this way. I have done my last few this way and they were some of the best I have ever made. I say tie em up!
