It's been so long since I've done a pork butt on my WSM, I may be considered a rookie again..

I am doing 2 pork butts on my WSM on Tuesday (my 39th birthday, what better way to celebrate). I am planning on arising around 3:30AM and starting my cook to be done in time for dinner. I am planning to place one on the upper rack and one on the lower.

Question: Will there be a difference in cook times for each of these? If so, which one should the Polder be inserted into? Of course I will be using the Minion method, and I believe I will be making a vinegar sauce as well as a mustard sauce.

Just looking for any tips for my butts.....

Why use both grates? Two butts will fit easily on one. I would just use the top one and leave the bottom one out.

You're right, Steve -- I have done it that way before. I'm telling you, major rookie type brain farts!!

Just picked up two pork butts at Costco -- .89/lb.!!!!! Very psyched. Will let you all know how they come out...
