Alternating which vent is open for even burn.

Can't believe this took six years to sink in....lol. I tended to get uneven burns. While popping the door open today, I just happened to notice that the coals were hot where the vent was open. Of course right...lol. So obviously the thing to do would be just switch which vent/vents were open. I guess it's never too late...lol.
 
i use pretty much one vent to maintain when i reach my target as well. as long as my temp is stable and within range i don't care how the coals burn

not sure its that critical. i purty much noticed that my coals burnt from the middle out. maybe a little more on one side but i had the burn going with just one vent open. that being said, you should do what works for you.

I like that...lol. Never heard that one.
The point I'm getting at is, I think it might reduce the need to stir the coals sometimes. Which then turns into high temp issues for me. Was just and idea.
 
Bill, I've noticed the same thing, so I leave all three open to some degree and use a windblock if there's any significant breeze.

I use water in the pan for low-n-slow and I find this really cuts down on the vent adjustments, so it's not a big deal to adjust all three. On my last overnight butt cook, I never touched the vents til the next morning after I got up at my regular time.
