As far as I know, there aren't multiple types of alder. I just cut down 3 of them (roots found their way into my sewer pipe...that was a mess, a really *expensive* mess).
A lot of people describe it as mild, but I have to disagree. In my opinion, it has its own taste. I use it for everything, although I think the "traditional" use is for smoked salmon. Try it, see what you think.
