alder shavings for salmon smoke?

I am planning on smoking some Salmon on thr WSM tomorrow. A while back I had picked up a bag of Luer Jensen Alder Chips N Chunks. In reality these are more like Chips N Shavings.
However for a short smoke like Salmon I would like to give them a try.

Any suggestions for using such small things for a smoke source on the WSM?

You can sprinkle a couple handfuls over the coals after you've soaked them for an hour or so, or, make a tin foil pouch and jam a bunch in there...close it up and poke some holes in it and throw it on the coals..Voila...SMOKE!!

Yeah, i'd go with the tinfoil pouch approach. That'll give you alot more smoke for yer money.

I recomend the foil pouch too. The chips will produce some nice smoke instead of just burning up. Never had much luck with getting long smoke results with putting the chips directly on the coals. Bryan
