Advice for tonight's cook please!

Picked up two butts weighing 15 1/2 pounds earlier and plan on doing my second overnight cook tonight. I'm planning on putting them on around midnight with a lunch time set for 2:00 tomorrow. I'm hoping the butts are done by 1:00 and plan on foiling them until right before 2:00.

My question is yes or no to water in the pan or not? I've read yes and no and am hoping the pros on this site will give me their usual great advice.

I'm guess-in you're running the WSM about 250ish? (or lower?)
If you can hold that temp on a overnite without a heat-sink than certainly have at it!

For overnight cooks I usually use water in the pan with good results.

For time my cooks usually go right around 17 hours for 2 to 4 butts that's at around 225 to 250.

I pull them off at 190 and foil them and place them in a cooler for 1 to 4 hours and pull the first one just before time to eat.

They hold well in a cooler I would start your cook earlier if you have a set time to eat. Then you can use the 1 to 4 hour window of holding them in the cooler for your advantage.

I usually start prepping and getting my fire going at around 19 hours before serving time and it typically works out that they are in the cooler for 1 to 2 hours.

Just woke up for the first time... Butts have been on for almost 5 hours and WSM temp is holding about 230. Meat temp is 165. Going back to bed!

12 hours and 15 minutes later they are done! Pulled them at 193 after probing them in several places. Foiled and in the cooler resting as I type this. Going to make some potatoe salad, baked beans, and my mom in law is making devolved eggs and green beans.

Thanks for all the input! One thing I learned from this cook is there is power in stirring coals on long cooks!
 
Just finished eating and all I can say is wow! Some of the best meat I have ever eaten for sure... Not sure if I liked the brisket I made a while back or the pulled pork more honestly. I really can not believe how easy the WSM is to smoke on... Made me a hero with my family and father in law today that's for sure!
