I started an 8 pounder Friday night at 8 pm. Full pan of lump, minion method. Everything was going good when I looked at it at 3 am. Woke up at 8 am during a monsoon-like rain. The fire was almost out. Instead of trying to restart the fire, I grabbed the meat, checked internal temp (140), basted it real good, wrapped in foil, and put in the oven at 250. 3 hours later it was falling off the bone. My wife and guests thought it was real good.
