This topic may be taboo here so I will apologize in advance.

Through the great cooking of my WSM I have managed to convince my wife that it is a good idea to expand my smoking team. I have a funds available to splurge a little here. so are there any recommendations above and beyond the WSM. I understand that it will require more attention a will require relearning my technique but I am looking for a challenge. Looking for a quality offset that is capable of log cooking.

Thank You

WSM, WGC

The Good One Smoker has recently been bought, but the smoker in the past has gotten really good comments. The way they design them for heat flow seems especially good and you can either go with a stationery or trailer model.

All that said, WSM fits my needs perfectly.

I bought a used Good One Model 42 (what they now call the Rodeo last year and I am very happy with it. It is bigger than I need for every day cooking so I still use my WSM for that, but for parties and for cooking to fill the freezer it is great. I'm still playing with different burn methods, but I basically use a modified Minion burn with it. The firebox is long and narrow so I build two piles of fuel (usually lump, but more recently Rancher) with a gap in the middle. then I add a lit chimney in the middle and control the temp with the firebox vents like I would do with my WSM. I can usually go 6 -8 hours without adding fuel.
