Although without heat of course, do they work with a sweet pepper and something other than a bacon wrap? Don't get me on the bacon thing. I just can't handle bacon now. What might replace bacon, if that's possible?
 
Somebody smack me for saying this but you could use (gasp!) turkey bacon.

Sliced ham cut in to strips would work as well.

What ever ham you like Dave. Tavern ham is one of my favs, and it's usually long like strips of bacon. Have them slice the ham thick (about the thickness of a quarter) like bacon for you.

Prosciutto would work, but be careful with the heat. It can get REAL tough when cooked, and also very strong in flavor. I think regular ham would be better if you have the option.
