A litle butt and backstrap

I had an urge to fire up the wsm today(that is an everyday occurance).I put the butt on the wsm at 8am. Did the daily routine and came home to pull it of the wsm around 4:30. Still had plenty of heat and charcoal so I decided to throw on venison backstrap. I am not sure which one was better, so I had to have some of each.

I always figured venison was too lean to smoke. I guess you pulled 'er off early. Looks fantastic. Thanks for the post!
 
Temp was running 250. the but came off at 180-190, foiled for 2hrs and then pulled. The strap came of at 135.It went on frozen and was on for about 1-1/2hrs. It was a perfect medium rare. yes a litle more rare than medium but I definetly would not go any farther than that.

I smoke venison all the time. I have a freezer full every year. As long as you don't go any more than medium rare venison usually turns out great. It's when you go beyond that it will dry out really fast on ya.
