doing some winter camping soon, (ice fishing, hiking) and need to come up with ideas of building a portable smoker ? I don't have the space to take my WSM. Nor do I want to. But i can take charcoal and grills. Just need a frame of some type ? I expect racoons and bears will knock it over at night. So I need to build something without any importance , so that if it gets damage, I simply dump it.

I checked on youtube for homemade smoker, but they are quite involved.

Any ideas of how I can make relatively cheap smoker ?

if you don't have the space to take a WSM, maybe you can get a Weber Smokey Joe or two ... DL Whitehead has posted a number of cooks he has done on a Smokey Joe ... ribs, pulled beef, brisket ... just smaller versions of what we do in the WSM

Amazon.com lists Smokey Joe silvers for $29.99

its gonna tough to find one now in my area of Toronto at this time of year :-(

any other suggestions , please feel free

Hi Simon,

If you want to read about the modifications I made to my Smokey Joe and see links to my smoking of the various BBQ items look here.

If you want to use a Smokey Joe for BBQ, you may very well come up with better modifications than mine. However, I was quite pleased with my results.

Remember it has a small capacity. I, still, use Smokey Joe often for pieces of chicken, small pork butts, meat loaf and small chuck roasts. It does a good job and, once you get a handle on the heat management, is very easy to use. It needs a bit more attention than a WSM, but I really enjoy using Smokey Joe for small-scale food items.

I have been reading and your mods are FANTASTIC !!! to say the least.

I was on the fence earlier today over taking pieces of my WSM and re-configuring it a mini egg like smoker, or simply buying a smoking joe.

I will buy a smoking joe, as at night most likely it may get damaged due to bears and raccoons.

And I certainly do not want to risk damage to my WSM :-)

Other alternatives are the terra cotta smoker a la Alton Brown or even an ECB and do the minimal mods (vent, relocated legs - I had one of these as my first smoker) which will turn it into a somewhat servicable smoker.

I second that. I used it a few times before I started using the kettle and WSM. Its pretty cheap, and compact. no need to worry bout charcoal, and works pretty good. I've done ribs and PP and both came out good.
