A couple appies

We are going to our daughter’s place for Thanksgiving.
She asked if I could smoke up a couple appies.

One is a beef sausage, the other is a beef kielbasa.
I also made some smoked shotgun shells for the first time.
I slid a bit of jalapeño in them so I hope they taste ok for everybody.

Ha ha, I thought your post said APPLES!! They all look delicious!

Have a great time with your daughter. My daughter is at her in-laws :cry:

I do that too.
The manicotti turned out a little tough so we tossed them into her oven with some water under the cookie rack for some steam action.
The flavor is pretty darn good thought.
 
I served the sausage and kielbasa with Dijon mustard and those literally didn’t last 15 minutes.

I may have over cooked the shotgun shells a bit to where the shells got a little hard but giving them some oven steam did a great job correcting that.
I sprinkled them with a little rub, mopped them with a home made sauce and the flavor came out nice.

I think next time I will use my wsm instead of my kettle.
The kettle was just way too crowded even with my second rack I used.
