I'm excited to share this cook with everyone here. I was very proud of how it came out. I'd also love some opinions on this cut.
Fresh out of the freezer.
Thawed and ready to be picked at. Seasoned with just little S&P.
Nice side profile of marbling. Cut off a portion cause this is a large piece of meat, and made it easier to cook evenly. Beautiful cut of meat.

Can barely see the juicy meat, but thought it was a cool shot at night.
After resting, and the best portion divided and de-fatted for my beautiful wife.
Plated pic is a bit awkward. Tried to get the salad in there too. Potatoes are fingerling potatoes. Done in the oven with EVOO and some pepper and rosemary. Super crispy skin and buttery inside.
Thanks for looking! My beef is local and sometimes the labels aren't perfectly aligned with what I see/lookup/see shared here. This one said "Sirloin". It looks like a sirloin cut + a little something extra. Call it a "zip-zap-zoop" who cares?...it was delicious. Just curious if a butcher or "expert" sees something specific here.
