what do you suggest I do to make sure the 9 lb butt is ready by 2pm? In hindsight, I should have purchased two smaller butts. I'm figuring appx 15 hrs so to be safe, probably need to put on 8-9pm the previous evening, do you agree? If I put it on at 8pm, it might be ready by 11am or noon, providing time to wrap and place in a cooler.
Do you ;think i am starting to early? any suggestions? We are having a non traditional Christmas dinner, pork butt and beer can chicken. Originally planned this around having the new WSM, but unfortunately, like many, delays have resulted in the wsm not getting here in time but I have a backup.
